Azra’s story

Azra is a passionate cook and baker who shared her culinary history of Mediterranean cuisine for over 25 years in Dayton area. Fallowing a 20 years in journalism Azra after coming to the United States open Azra’s Mediterranean cuisine at 2nd Street Market in Dayton. Soon her place begins one of the popular spots in the town. Over ten years she is cooking and baking demo on the local tv. Her cooking and baking get many awards in the Dayton area festivals and events. Azra’s baklava was one of the ten most beautiful things in the Dayton. With her cooking and baking she found a place in the National Geographic  magazine.


She is very proud on the long history of the baklava  recipe in her family .  One  of the world most famous dessert  has been making with same recipe for generations in her family back in Europe. Always same  flavor, nutty, buttery, golden  flaky phyllo, honey syrup , little touch of lemon and worm spices making unforgettably delicious dessert. From earlier childhood she learned from her mother and grandmother how to  cook and bake with love of tradition. She learned that every family dish has a story and memories.  She watched on Sunday or holiday , mom  and grandma gathered around kitchen table.  They spread a long clean tablecloth over the table  and making phyllo dough for spinach pie, strudel or baklava. Phyllo dough stretches by the hands, large to cover whole tablecloth without any holes on the dough. Very thin dough just perfect for baklava. After she learned how to perfectly make a filling of the nuts for baklava, flaky phyllo , spices to the perfect golden bake and  drizzle  with honey sugar syrup.

 
A life long learning she also loves  taking cooking classes herself on the holidays in Europe. She also loves making her own classes fun, hand on, and uses recipes  that are easy to make home.  She add her personal touch to traditional dishes and textures in her homemade food.
